h5grove dependency fix

The separate uninstall/install of pynxtools in Dockerfile updates the h5grove version, leading to errors. Fixable by forcibly installing the old version in Dockerfile.

Also, update of pymongo from 4.6.3 to 4.7.0 seems to break our tests, version should be fixed for now.
